Ingredients for 1 servings:

  • 400 g fir branch(es) – shoots, young
  • 1 liter of water
  • 4 slices of lemon
  • 1 kg sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Boil the pine shoots with water and lemon slices. Cover and let steep for 30 minutes, then strain through a cotton cloth. Now add the sugar to the pine shoot brew and let it simmer for about 2 hours. Do the “running test” every now and then. To do this, pour a little honey onto the plate and let it cool. If it runs thickly, it’s ready. Pour the thickened honey into preheated, thoroughly dried jars. Seal the jars tightly. Stored in a cool, dry, and dark place, this honey will keep for over a year.
