Tomato salad with fried minced meat and yogurt sauce

Ingredients for 2 servings:

  • 600 g tomatoes, small, large and colorful
  • 200 g cucumber(s)
  • 3 spring onions
  • 8 large caper apples, or a small jar of capers
  • 2 tbsp olive oil
  • 250 g minced meat, mixed
  • salt and pepper
  • 1 tsp Ras el Hanout
  • 100 g feta cheese
  • 300 g low-fat yogurt
  • chili flakes

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

quick and easy

Rinse, trim, and dry the tomatoes, cucumber, and spring onions. Cut the tomatoes into wedges, slices, or cubes. Peel, halve, and slice the cucumber, if desired. Cut the spring onions diagonally into rings. Drain the capers and halve them, if desired. Heat the oil in a large pan and fry the minced meat, turning frequently, until crumbly and brown. Season with salt, pepper, and ras el hanout. Finely crumble the feta and mix with the yogurt. Season to taste with salt, pepper, and chili flakes. Serve the tomatoes, cucumber, and spring onions. Place the fried minced meat on top and garnish with capers. Drizzle with a little yogurt sauce and sprinkle with chili flakes. Serve the remaining sauce as a dip.
