Ingredients for 1 servings:
- 80 g chocolate, dark
- 50 g baking cocoa
- 40 g xylitol (sugar substitute)
- 3 eggs, separated
- ½ tsp baking powder
- 1 tbsp vanilla protein powder
- 140 g almonds, ground
- 1 pinch of salt
- 1 pinch(s) cinnamon powder
- 80 g coconut oil
Instructions
Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 35 minutes
First, melt the chocolate. Then, in a separate saucepan, melt the cocoa powder, xylitol, and coconut oil. Separate the eggs and beat the egg whites with a pinch of salt until frothy. Mix the melted chocolate with the chocolate-fat mixture. Now add the remaining ingredients (baking powder, cinnamon, protein powder, egg yolk). Gently stir in the egg white foam until the batter forms a nice dough. Line a baking dish with baking paper, pour in the batter, and spread it out thinly (about 2-3 cm thick). Preheat oven to 180 degrees Celsius (top/bottom heat) and bake on the middle rack for about 15-20 minutes. The batter must cool before dividing it.
