Ingredients for 6 servings:

  • 600 g veal boiled beef or boiled beef
  • 250 g pasta, medium width
  • 1 bunch of soup vegetables (leek, carrot, celery)
  • 1 m.-sized onion(s)
  • 2 bay leaves
  • 4 juniper berries
  • 1 bunch of herbs (parsley, basil, some Mexican cilantro, not German, which tastes soapy)
  • salt and pepper
  • nutmeg
  • Broth, granulated (possibly Fondor)
  • 250 g Parmesan, freshly grated
  • 300 g white beans

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 2 hours; Total time approx. 3 hours

a hearty dish for the cold season

Soak the beans the night before; they should be well covered with water. Wash the meat and place it in a large pot. Add the quartered, unpeeled onion, bay leaves, and juniper berries, and fill with water until the meat is well covered. Season with salt and pepper. Bring to a boil, then reduce the heat to low. Simmer gently for 1 hour; do not boil, or the broth will become cloudy. Meanwhile, boil the beans separately, drain, and set aside. Wash, peel, and cut the vegetables into bite-sized pieces. After 1 hour, remove the meat and use a sieve to remove the bay leaves and juniper berries. Return the meat to the broth, add the vegetables, and simmer gently for another half or an hour, until the meat is tender. Meanwhile, cook the noodles according to the package instructions. Wash, spin, and chop the herbs. Use a cloth to squeeze out any remaining liquid and set the herbs aside. Grate the Parmesan cheese and set it on the table so everyone can help themselves to as much as they like. Remove the meat, cut it into bite-sized pieces, and return it to the broth with the beans. If you like the stew thicker, you can puree a good handful of cooked beans in a blender and stir it in. Add the pasta and season again to taste. I like to be careful with salt; I prefer to set out a salt and pepper mill for seasoning. Stir in the herbs right at the end. If serving this as a main course, you can also serve it with baguette.
