Sweet rice with saffron and raisins
Place 1 cup of rice (a coffee cup) with 2 cups of water and a pinch of salt in a microwave pot. Add the saffron (those small yellow tubs from the supermarket containing about 2 g). Peel and finely dice the garlic cloves, and add them to the pot. Finally, add the raisins (about a handful). Microwave the whole thing at 600 watts for about 22 minutes – there should be no water left in the pot. Finally, stir in the 2 teaspoons of honey and season with salt and pepper. Stir and serve. The rice is sweet and goes perfectly with Caribbean food or poultry. Tips: Of course, this can also be cooked in a regular pot on the stovetop. But I always make rice in the microwave because then I don’t have to worry about it and nothing burns. Instead of saffron, you can also use turmeric for the color.
