Chicken breast in paprika and sherry sauce

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • 1 bell pepper(s), red
  • 1 onion(s)
  • ½ liter vegetable broth
  • 1 shot of sherry
  • pepper
  • Salt
  • some olive oil
  • 1 bell pepper(s), yellow
  • 1 bell pepper(s), green

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Low in calories and extremely tasty

First, season the chicken breast fillet with salt and pepper and sear on both sides in a little heated olive oil. Trim and stripe the bell peppers. Peel and slice the onion. Briefly sear the ingredients with the meat, then deglaze with the vegetable stock and add the splash of sherry. Cover and simmer over medium heat for about 15 minutes. Check the meat is cooked and season the sauce with salt and pepper if necessary (although this is usually not necessary). This dish is best served with couscous or rice prepared according to the package instructions.
