Turkey breast with spinach

Ingredients for 2 servings:

  • 500 g turkey breast fillet(s)
  • 400 g fresh leaf spinach
  • 3 garlic cloves
  • 20 g butter
  • 50 g pine nuts
  • 80 g Parmesan
  • some salt and pepper
  • Oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Low-carb – easy, quick and delicious

Cut the turkey fillet into the desired pieces or strips. Finely chop the garlic cloves. Slowly roast the pine nuts without adding any oil, then set aside. Heat the oil in a pan and sear the turkey and garlic until crisp. Once everything is nicely seared, add the spinach and butter and mix (if using frozen spinach, thaw it first). Season with salt and pepper. But be careful: the Parmesan cheese at the end adds salt. Let everything simmer gently for 5 minutes. Finally, stir in the Parmesan cheese. Sprinkle the pine nuts on top when serving. This dish can be easily enhanced with all sorts of ingredients, such as zucchini, pepperoni, and eggplant. Add them as needed according to the doneness. Tip: For those who aren’t into low-carb, I recommend adding 150g of risotto pasta (which looks like grains of rice) or other mini pasta after adding the spinach. Add this including 2 dl of bouillon (broth) in the last 5 minutes.
