Baked applesauce pancakes

Ingredients for 4 servings:

  • 250 g flour
  • 375 ml milk
  • 125 ml mineral water
  • 1 tbsp sugar
  • 1 pinch of salt
  • 2 eggs, (L)
  • 125 ml milk
  • 2 tbsp sugar
  • 1 egg(s)
  • butter flakes
  • Applesauce, as needed

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Make a thin pancake batter from the ingredients for the pie dough (up to and including the eggs). First, whisk the flour with the milk and mineral water until smooth, then add the sugar and salt, followed by the eggs one at a time. Cook thin pie doughs in a hot pan and set aside. Spread each pie dough with applesauce. Do not spread the applesauce too thickly, as it will leak out later. Roll up the pie dough, cut it in half, and place it in a greased baking dish. Whisk 1/4 liter of milk with the egg and sugar and pour over the applesauce pie dough. Then sprinkle generously with butter flakes. Bake in a preheated oven at 185°C (top/bottom heat) for about 20 minutes. If you have any leftover applesauce, you can eat it cold with the baked pie dough. The pie dough is also delicious with cold vanilla sauce or vanilla ice cream, or simply on its own.
