Absolutely delicious and a great way to use up leftover apple peels
Place the apple peels in a bowl with the lemon juice and zest. Add the salt, basil, and butter. Lightly toast the almonds in a non-stick pan and add them as well. Blend the mixture thoroughly, stirring occasionally to prevent the apple peels from getting mixed in. Add the cinnamon and honey and blend again until you have a smooth paste. Transfer to a small bowl and sprinkle with cinnamon and sugar if desired. Tips: You can eat the puree cold, spread it on bread, enjoy it as a side dish with a dessert, or heat it in the microwave and eat it warm. It also tastes good stirred into hot milk with 1-2 spoonfuls and then drunk.
