Ingredients for 4 servings:

  • 4 servings of pasta
  • Quark (the same amount as the leftover pasta)
  • 2 egg yolks
  • Lemon(s) – zest, grated
  • Raisins
  • Honey, to taste
  • 1 tbsp soy flour (or more, depending on the moisture content of the curd)
  • 2 egg whites
  • Oil, for frying
  • Cinnamon

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Recycling leftovers

Cut the pasta into small pieces, mix with the quark, egg yolks, lemon zest, raisins, honey, and soy flour. Beat the egg whites until stiff and fold in. Heat the oil in a pan and add 3-4 tablespoons of the pasta mixture, flatten, and fry until fried. Sprinkle with cinnamon. Serve with fruit sauces, fruit compote, or plum jam.
