Sauerkraut with minced meat

Ingredients for 4 servings:

  • 2 large onions
  • 2 garlic cloves
  • some oil, tasteless, e.g. safflower oil
  • 1 kg minced meat, half and half
  • 1 tbsp, leveled cayenne pepper
  • 1 kg sauerkraut
  • 150 ml broth
  • 1 cup of crème fraîche, or sour cream
  • Salt

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Peel and dice the onions, peel and finely chop the garlic. Heat the oil in a large pan and lightly fry the onions and garlic, not too brown, but more than translucent. Add the minced meat and continue frying until it has taken on some color. Now stir in the cayenne pepper. Tear the sauerkraut apart a little and mix it with the other ingredients in the pan. Add the stock. Simmer for about 15 minutes. Season to taste, but be careful with the cayenne pepper. Add a little salt to taste and stir in crème fraîche or sour cream to finish. Serve with boiled potatoes or farmhouse bread. If it gets too hot during the meal, you can put out the heat with a delicious beer.
