Potato soup with a twist

Ingredients for 4 servings:

  • 500 g mashed potatoes, approx., (leftovers from the previous day)
  • e.g. spinach, frozen or fresh, chopped (leftovers)
  • 1 handful of buttered vegetables or soup vegetables, frozen
  • 2 pairs of Vienna sausages or bratwurst
  • 1 small onion(s)
  • 2 eggs (scrambled), if desired
  • some parsley
  • some chives
  • e.g. broth, instant
  • some oil
  • 2 cloves garlic
  • Spice(s) of your choice

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Recycling leftovers

Thinly slice the sausages, halve and dice the onion. Place both in a pot and sear until crisp. Remove the pot from the heat and add the mashed potatoes, spinach, vegetables, garlic, and, if desired, the scrambled eggs. Pour in the desired amount of stock (depending on how thin and flavorful you want it). Return the pot to the heat and simmer. Season to taste. Finally, add the fresh parsley and chives.
