Pea soup with Arctic prawns

Ingredients for 4 servings:

  • 1 onion(s)
  • 1 clove(s) garlic
  • 2 tbsp butter
  • 100 ml white wine or white port wine
  • 250 ml cream
  • 150 ml milk
  • 700 ml chicken stock
  • 1 lime(s)
  • 150 g shrimp(s) (Arctic shrimp)
  • salt and pepper
  • 1 pinch(s) of sugar
  • 30 g butter
  • 300 g peas (frozen)
  • n. B. herbs, fresh

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Peel the onion and garlic clove and dice finely. Heat the butter in a saucepan and sauté the onion and garlic until translucent. Deglaze with white wine (or white port) and chicken stock. Add the cream and milk while stirring, and simmer the soup over medium heat until reduced slightly. Wash the lime with hot water, dry thoroughly, and finely grate the zest. Squeeze out the juice. Thread the Arctic prawns onto wooden skewers and fry briefly on both sides in olive oil. Add the lime zest and juice, season with salt, pepper, and sugar, and remove from the heat. Finely chop fresh herbs, if desired, and sprinkle over the prawns. Add the peas to the soup and cook briefly. Purée the soup with a hand blender and pass through a fine sieve. Dice the butter and mix into the soup. Serve with the prawns. You can also add the prawns to the soup without the wooden skewers.
