Airy muffins with frosting and berries

Ingredients for 1 servings:

  • 250 g flour
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 3 eggs
  • 150 ml oil
  • 150 ml mineral water
  • 1 packet of baking powder
  • 100 g butter, room temperature
  • 100 g double cream cheese
  • 100 g powdered sugar
  • lemon zest
  • Berries by season
  • Powdered sugar for dusting

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

for a 12-cup muffin tray

Beat the eggs with sugar, vanilla sugar, and oil until creamy. Add the sparkling water, flour, and baking powder and mix. Pour the batter into 12 muffin cups. Bake in an oven preheated to 180°C (top/bottom heat) for about 20 minutes on the middle rack. Let cool for one hour. For the frosting, beat softened butter with cream cheese, powdered sugar, and a little grated lemon zest until creamy. Spread on the cooled muffins. Decorate with various seasonal berries, as desired. Dust with a little powdered sugar and enjoy.
