All Sorts of Couscous
The perfect all sorts of couscous recipe with a picture and simple step-by-step instructions.
- 1 Cup Couscous
- 2 cups Vegetable broth hot
- 1 Onion red
- 0,333333 Cauliflower fresh
- 0,333333 Broccoli
- 0,333333 Romanesco
- 1 small Eggplant fresh
- 3 Tomatoes
- 2 Handful Fresh spinach
- 100 g Unsweetened soy yogurt
- 2 tsp Africa spice mix (or curry)
- Divide the broccoli, cauliflower and romaneso into small florets and cook in a little salted water for about 5 minutes. Pouring off.
- Pour the broth over the couscous. Let it soak for 10 minutes.
- Chop the onion in time. Dice the eggplant. Roughly dice the tomato.
- Sauté the onions in a little oil. Add the aubergine and sauté briefly. Add cauliflower, broccoli and romaneso.
- Add couscous. Fry everything together for 10 minutes. Finally fold in the spinach and tomatoes.
- Mix the yoghurt with the spice mixture and serve together.
