Almond quark waffles

Ingredients for 1 servings:

  • 2 eggs
  • 1 pinch of salt
  • 40 g butter
  • 40 g cane sugar
  • 15 g vanilla sugar
  • 250 g quark
  • 100 g spelt flour type 630
  • 30 g almonds, ground
  • ½ tsp baking powder
  • some fat for the waffle iron
  • 1 tbsp powdered sugar for dusting

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

for approx. 7 waffles

Separate the eggs and beat the egg whites with a pinch of salt until stiff peaks form. Cream together room-temperature butter, sugar, and vanilla sugar until creamy. Stir in the egg yolks, then the quark. Mix the flour, almonds, and baking powder and fold in. Finally, fold in the egg whites. Lightly grease the waffle iron and bake (heart-shaped) waffles from the batter until all the batter is used up. Dust with powdered sugar, if desired. Serve with fruit salad or compote. Makes about 7 waffles, serves 2-3. You know best how much you need. We have soup first.
