Alsatian-style tarte flambée from the grill with a pizza stone

Ingredients for 1 servings:

  • 100 g wheat flour type 405
  • 60 ml water
  • Salt
  • 0.33 onion(s)
  • 80 g diced ham
  • e.g. chives
  • 120 ml crème fraîche
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 15 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 38 minutes

For the dough, knead the flour with the water and a pinch of salt, then cover and let rest for about 15 minutes. For the topping, mix the crème fraîche with salt, pepper, and nutmeg. Peel and slice the onion, dice the ham, and wash the chives, shake dry, and chop finely. Preheat a pizza stone on the grill for about 30 minutes at at least 250 degrees Celsius. Flour a pastry board and roll out the dough thinly to a diameter of about 35 cm. Flour the board again so that the tarte flambée can easily slide onto the pizza stone. Spread the prepared crème fraîche evenly over the surface, then arrange the ham cubes and onion on top. Slide the tarte flambée onto the hot pizza stone and bake for about 8 minutes. Sprinkle the chives over the tarte flambée to serve.
