Ingredients for 4 servings:

  • 1 tbsp butter
  • 3 apples, peeled, pitted and cut into small cubes
  • 1 tbsp cranberries, dried
  • 3 tbsp sugar, brown
  • 3 tbsp apple cider vinegar
  • 2 tsp fresh ginger root, grated
  • ¼ tsp salt
  • ¼ tsp mustard powder
  • ⅛ tsp allspice, ground
  • ½ tsp cayenne pepper or chili powder
  • ½ tsp salt
  • ½ tsp garlic powder
  • ½ tsp coriander powder
  • ¼ tsp black pepper
  • 4 pork chops
  • Oil, for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Spiced Pork Chops with Apple Chutney

For the chutney, melt the butter in a pan over medium heat. Add the apples and sauté for 4 minutes. Add the cranberries, sugar, apple cider vinegar, ginger, salt, mustard powder, and allspice to the apples and bring to a boil. Then reduce the heat and simmer the chutney gently for 8 minutes, stirring occasionally, until the apples are soft. While the chutney is simmering, heat a pan with a little oil over medium heat. Mix the cayenne pepper or chili powder with the salt, garlic powder, coriander, and pepper and sprinkle over the chops. Add the chops to the pan and cook until nicely browned and cooked through, turning only once. Then remove from the pan and serve with the chutney. Serve with buttered green beans with browned garlic slices and some bread.
