Apple and spelt cakes

Ingredients for 1 servings:

  • 3 apples
  • 200 g wholemeal spelt flour
  • 1 packet of baking powder
  • 200 ml soy milk (soy drink), vanilla or natural
  • 1 tsp cinnamon powder
  • 1 pinch of salt
  • 200 ml mineral water
  • e.g. vanilla extract

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Core the apples and cut them into small pieces. It’s important that the pieces are really small, otherwise the cakes won’t bake properly. Mix the flour with the baking powder, pour in the soy milk and water, and stir to form a smooth batter. Add the cinnamon, salt, vanilla extract, and the apple pieces and mix everything together. Heat a Teflon-coated pan. Depending on how well-coated the pan is, you may not need to use oil; otherwise, heat a tiny bit. Add a full tablespoon of batter for each cake to the pan over medium heat, then briefly cover with the lid. This will cause them to rise slightly. Turn them over once and finish baking. The batter and cakes will only be as sweet as the apples. If you prefer them sweeter, you can of course add more sugar or use sweet spreads. Makes about 10 cakes.
