Apple Cider Cake

Ingredients for 12 servings:

  • 250 g flour
  • 300 g sugar
  • 1 tsp baking powder
  • 1 pinch of salt
  • 3 packets of vanilla sugar
  • 100 g butter
  • 1 egg(s)
  • 1 ½ kg apples
  • 1 lemon(s)
  • 750 ml cider
  • 2 packs of pudding powder, vanilla
  • 500 ml sweet cream
  • 150 ml egg liqueur
  • 1 pack of sauce powder, vanilla
  • 6 tbsp water

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Knead together flour, 100g sugar, baking powder, salt, 1 sachet of vanilla sugar, butter in pieces and egg. Chill for approx. 30 minutes. Peel and core the apples, coarsely grate them and drizzle with the juice of the squeezed lemon. Roll out the dough and line a springform pan with it, pulling up one edge. Bring the cider and 200g sugar to a boil. Mix the custard powder with the water, stir into the cider and let it simmer for approx. 1 minute. Squeeze out the grated apple and spread it over the dough. Pour the hot cider mixture on top and bake at 175°C (E) for approx. 1 hour. Let cool overnight. Remove from the pan. Whip the cream until stiff, drizzle in 1 sachet of vanilla sugar. Spread the cream evenly over the cake. Mix the egg liqueur with the vanilla sauce powder and spread it over the cream.
