Ingredients for 16 servings:

  • 2 apples (sweet variety)
  • 100 g natural yogurt 1.5%
  • 120 ml buttermilk
  • 300 g spelt flour (wholemeal)
  • 100 g apple sauce, sweetened
  • 90 g raw cane sugar
  • 2 tsp, leveled baking powder
  • 1 tsp, leveled baking soda
  • 1 tsp cinnamon
  • 1 egg(s)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

light and wholesome

Preheat the oven to 180°C. Core and peel the apples (peeling is not necessary for organic apples), and cut into small pieces. Whisk the buttermilk with the yogurt, cinnamon, sugar, applesauce, and egg until well combined. Combine the flour with the baking powder and baking soda and stir into the foam mixture. Finally, fold in the apples. Divide the mixture among 16 muffin cups and bake for about 20 minutes.
