Ingredients for 2 servings:
- 2 m.-sized eggs
- 2 tbsp sugar
- 1 pinch of salt
- 4 tbsp flour
- 200 ml carbonated mineral water
- 2 cl Calvados
- 2 apples, organic
- some butter
- e.g. maple syrup
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes
a delicious pancake that also helps with diarrhea
Wash the apples, remove the stems, and grate the apples with the skin on. Separate the eggs and beat the egg whites until stiff peaks form. Mix the apples with the sugar, salt, and eggs. Add the flour, mineral water, and Calvados and continue stirring until a stiff batter forms. Fold in the beaten egg whites. Heat a non-stick pan with a little butter. Add a ladleful of batter to the pan and cook for about 4 minutes, then turn and cook for another 4 minutes. The pancakes should be golden brown. Repeat with the remaining batter until all the batter is used up. Makes 4 pancakes with a diameter of about 20 cm. Plate and serve the pancakes. Brush with maple syrup at the table.
