with mashed potatoes
Soak the bread roll in lukewarm water. Peel and core the apples. Cut 1/2 apple into small pieces and the rest into wedges. Drizzle the wedges with lemon juice. Briefly fry the onion and diced apple in a small pan, turning occasionally, and let cool in the pan. Squeeze out the excess water from the bread roll, mix well with the minced meat, egg, thyme, mustard, and the onion-apple mixture. Season with salt and pepper. With wet hands, form 12 patties and fry them in a non-stick pan with 2 tablespoons of oil over medium heat for about 6 minutes on each side. Mix the yogurt and cider until smooth, season with pepper, salt, and sweetener to taste. Trim the chicory and remove the leaves. Arrange the apple slices on the leaves and serve the patties with the side. Drizzle with yogurt sauce and serve. Mashed potatoes go well with the bread.
