Carrot greens are not only rich in fiber, but also contain many vitamins and minerals.

Pesto with carrot greens and cashew nuts

If you have bought a large bunch of carrots, the carrot cabbage can be processed into a spicy pesto.

  1. For this, you need 150 to 200 g of carrot greens, 1 to 2 cloves of garlic, 150 g of cashew nuts, 15 tablespoons of virgin olive oil, a squeeze of lemon juice, pepper, and salt.
  2. Place the cashew nuts in a pan and toast them until they are lightly brown and fragrant.
  3. Wash the carrot greens and, if necessary, separate the side shoots from the stalk.
  4. Depending on how thorough your blender or blender is, you can chop the carrot greens a little beforehand.
  5. Put the carrot greens, cashew nuts, garlic, lemon juice, and olive oil in your blender and season the finished pesto with salt and pepper.
  6. The pesto will keep in an airtight container in the fridge for up to a week.
  7. You can also fill the pesto into small ice cube molds and put them in the freezer. So you always have your pesto to hand in and can also easily portion it.
