Are Only Pickled Olives Edible?

For two reasons, the trade almost exclusively offers olives pickled in various liquids. This serves on the one hand for preservation and on the other hand for taste. Freshly harvested olives treated in this way would still not be edible: they contain too many bitter substances.

Therefore, olives must first be treated with caustic soda, which removes the bitter substances from them. They are then preserved by soaking them in lactic acid. Only then can they be placed in liquid and thus receive the aroma with which they are sold. The liquid is usually water or oil. Adding vinegar or lemon and spices such as garlic, paprika or chili gives the olives more flavor.
