Are Raw Brussels Sprouts Poisonous?

Brussels sprouts are not poisonous when raw, but they are heavy on the stomach. The small sprouts are also often very firm and hard. Like other cabbage vegetables, Brussels sprouts can also cause flatulence because of the large amount of fiber they contain. For many, the raw cabbage is therefore considered inedible. If in doubt, brussels sprouts should be pre-cooked at least briefly for use in salads.

Raw food fans, on the other hand, usually eat raw Brussels sprouts in salads or with a rich dip. For raw consumption, the cabbage should be finely grated or cut into thin slices.

If you prefer to eat Brussels sprouts, it is important not to leave the cabbage in the boiling water for too long. The vitamin-rich Brussels sprouts not only lose their taste, but also many heat-sensitive nutrients. In addition, the small florets disintegrate if they are cooked too long. Brussel sprouts should therefore not be cooked for more than five to seven minutes. When steaming, it takes about five to ten minutes for the sprouts to cook. The cooking time will be shorter if you cut the stalks of the sprouts crosswise. Then the Brussels sprouts can be served as a side dish or used for gratins and the like. Cumin, anise or fennel help to make the cabbage more digestible.
