Artichoke and Tomato Lasagne for Beginners
The perfect artichoke and tomato lasagne for beginners recipe with a picture and simple step-by-step instructions.
Dough:
- 250 g Mixed mushrooms
- 200 g Shallots
- 5 St. Panicle tomatoes
- 2 St. Artichokes, great
- 3 tbsp Extra virgin olive oil
- 1 tbsp Butter
- Parmigiano or pecorino, grated
- Finely chopped parsley
- Chopped herbs
- Pepper
- Salt
- 130 g Flour
- 3 St. Eggs
- 1 pinch Extra fine sugar
- 1 pinch Baking powder
- 0,5 tsp Salt
- 0,25 L Milk
- For the shape:
- 2 tbsp Breadcrumbs
- First prepare the pancake batter with the whisk: Mix 130g flour, 1 pinch of sugar, 1 pinch of salt and baking powder well in the bowl. First violently beat the eggs under it. (If you stick to the order there are no lumps). Only then should the milk be beaten. Set the dough aside for at least 1 hour and cover with a kitchen towel
- Prepare the mold for the lasagna, and heat the oil in a pan. Bake at least 3 pancakes in it. With the lasagna dish upside down, take the measurements and cut the dough to size. If you like, you can also use small soup bowls or large cups, etc., then the flatbreads will just be round 🙂
- Heat the oven to 180 ° C.
- Now cut the artichokes so that the hearts remain. Don’t throw away the leaves, more on that later. Dice the hearts, about 1cm and sauté in the deep pan. Deglaze with the stock. Season with salt and pepper and whisk with olive oil.
- If not fresh, drain the plies in the sieve, otherwise fry them, prepare them evenly. The pan cannot be too hot now, so step on the gas. Peel off the shallots and toast them in fine strips. Scald the tomatoes and peel them and then braise the tomatoes as well. Mix everything with the artichokes and herbs.
- Butter the pan, then bread it. Put in the first pancake and spread the milk on top, the next pancake, vegetables, etc. until everything is used up. To finish, sprinkle grated pecorino cheese on top
- Place in the oven for about 25 minutes. If you like, you can also make a Bechamél beforehand and process it with it. Other vegetables are of course also possible, or a Ragü Bolognese (recipe in my cookbook) etc., It doesn’t always have to be pasta sheets 🙂
