Aruni – simple and spicy vegetable stew with banana from India

Ingredients for 2 servings:

  • 1 banana(s)
  • 1 m.-sized potato(s)
  • 2 m.-large tomato(s)
  • Cayenne pepper
  • turmeric
  • cardamom
  • 4 garlic cloves
  • 2 tbsp oil
  • 1 ½ tsp mustard
  • chili powder
  • Salt
  • 2 m.-sized onion(s)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Peel and finely chop the onion and garlic. Peel the banana and potato and cut both into strips about 2.5 cm long. Heat 2 teaspoons of oil in a sufficiently large saucepan. Fry the potato and banana strips in it and then set aside. Now heat the remaining oil in a pan. Add the onion and garlic and sauté until translucent. Then add the dry spices, mustard, and tomatoes and fry briefly. Add the fried bananas and potatoes and mix everything well. Add a little water and bring to a boil. Then reduce the heat so that it is just simmering. The cooking time is approximately 15 minutes. Season to taste with the spices before serving. Serve with hot rice.
