Asian noodle stir-fry

Ingredients for 4 servings:

  • 500 g chicken breasts
  • 1 garlic clove(s)
  • 1 piece(s) ginger, approx. 2 cm
  • 130 ml soy sauce
  • 1 red bell pepper(s)
  • 2 m.-large zucchini
  • 1 stalk(s) leek
  • 150 g soy sprouts
  • 300 g Chinese egg noodles
  • 4 tbsp oil
  • pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Dice the chicken breast. Finely chop the garlic and ginger and mix with 4 tablespoons of soy sauce and 1 tablespoon of oil. Marinate the meat for at least 15 minutes. Cut the bell pepper and zucchini into strips and the leek into rings. Cook the egg noodles according to the package instructions and set aside. Heat 3 tablespoons of oil in a wok or large skillet. First, add the meat and season with pepper, then stir-fry the vegetables. Finally, add the egg noodles and bean sprouts and stir-fry briefly. Deglaze with the remaining soy sauce and season to taste.
