Ingredients for 1 servings:

  • 50 g rice (e.g. long grain or basmati)
  • 40 g broccoli
  • 40 g mushrooms
  • 40 g peas
  • 75 ml vegetable stock
  • 150 g shrimp(s)
  • oil
  • Sambal Oelek
  • curry paste
  • Salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

with shrimp

Cook the rice according to the package instructions. Sauté the vegetables in a little oil and add the cooked rice. Add the shrimp to the pan last, as they only need 2-3 minutes to cook. Then deglaze with vegetable stock and simmer for 5 minutes, until the stock is almost completely absorbed. Season with sambal oelek, curry paste, and salt. Serve on a plate.
