Asian Tomato Soup with Soba Noodles

- 800 g Cherry tomatoes
- 150 g Soba noodles
- 200 ml Rice wine
- 4 Spring onions only the white and light green
- 1 Clove of garlic
- 2 cm Fresh ginger
- 0,5 Lime, just the juice
- 2 tbsp Soy sauce
- 2 tbsp Sesame oil
- 1 tsp Raw cane sugar
- Cut the tomatoes crosswise, scald and rinse briefly. Then skin and roughly mash about half of it with your hands.
- Peel the ginger and garlic and chop very finely. Sweat briefly in hot oil.
- Deglaze with rice wine. Add the soy sauce, lime juice, a little sugar and all the tomatoes and simmer for 10 minutes.
- In the meantime, cook the pasta according to the instructions on the packet. Cut the spring onions into rings.
- Pour soup into plates, add pasta and sprinkle with spring onions.
