Asian Tomato Soup with Soba Noodles

The perfect asian tomato soup with soba noodles recipe with a picture and simple step-by-step instructions.

  • 800 g Cherry tomatoes
  • 150 g Soba noodles
  • 200 ml Rice wine
  • 4 Spring onions only the white and light green
  • 1 Clove of garlic
  • 2 cm Fresh ginger
  • 0,5 Lime, just the juice
  • 2 tbsp Soy sauce
  • 2 tbsp Sesame oil
  • 1 tsp Raw cane sugar
  1. Cut the tomatoes crosswise, scald and rinse briefly. Then skin and roughly mash about half of it with your hands.
  2. Peel the ginger and garlic and chop very finely. Sweat briefly in hot oil.
  3. Deglaze with rice wine. Add the soy sauce, lime juice, a little sugar and all the tomatoes and simmer for 10 minutes.
  4. In the meantime, cook the pasta according to the instructions on the packet. Cut the spring onions into rings.
  5. Pour soup into plates, add pasta and sprinkle with spring onions.
