Asparagus and Potato Hash Browns with Ham Salad

The perfect asparagus and potato hash browns with ham salad recipe with a picture and simple step-by-step instructions.

  • 2 Shallots
  • 200 g Cooked ham
  • 2 tbsp White wine vinegar
  • 75 ml Meat broth instant
  • 1 tsp Dijon mustard
  • 4 tbsp Rapeseed oil
  • Salt and pepper
  • 5 Rods Asparagus green
  • 5 Rods Asparagus white
  • 400 g Waxy potatoes
  • 0,5 bunch Parsley
  • 3 tbsp Potato flour
  • 80 g Butter
  1. Peel shallots and cut into rings. Cut ham into strips. In a bowl, whisk vinegar with mustard, broth, salt and pepper. Add and stir in the oil. Pluck the parsley leaves from the stems and chop finely. Put the ham strips and shallot rings in a bowl, add the chopped parsley and mix in the salad dressing.
  2. Peel the whole white asparagus, green in the lower third, cut off the woody ends. Peel the potatoes. Roughly grate the asparagus and potatoes, mix with the potato flour, season with salt and pepper.
  3. Heat about 1/4 of the butter in a pan. Add the asparagus and potato mixture with a tablespoon portion by portion to the pan and press down with a spoon, fry until golden brown over medium heat, then turn carefully and place on the Fry the other side for about 5 mins. Prepare more hash browns like this. Keep the fried rösti warm in the oven at around 80 degrees.
  4. Arrange the asparagus and potato rösti with ham salad on plates and serve.
