Asparagus from the Thermomix with fried zander fillet

Ingredients for 2 servings:

  • 1 kg asparagus
  • 1 liter of water, for the Thermomix
  • 1 tsp salt
  • 1 tsp sugar
  • 2 pike-perch fillets, fresh or thawed
  • 4 tbsp flour, double-handled, e.g. Wiener Griessler
  • salt and pepper
  • 1 bunch of chives
  • 5 tbsp clarified butter

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Wash and peel the asparagus. Place the peeled asparagus in the Varoma. Add water, salt, and sugar to the mixing bowl, place the Varoma in place, and cook for about 30 minutes on speed 1. Wash and dry the fish fillets, season with salt and a little pepper, and flour them. Heat 2 tablespoons of clarified butter or clarified butter in a pan and gently fry the fillets skin-side down. This cooks very quickly. After about 3 minutes, turn them over and lightly fry the other side. Melt 3 tablespoons of clarified butter for the asparagus in a small saucepan and heat it up. Wash, dry, and chop the chives. Arrange the cooked asparagus on warmed plates, add the fish fillets, pour the melted butter over the asparagus, and garnish with chives. A very tasty and light meal.
