Asparagus muffins

Ingredients for 12 servings:

  • 500 g asparagus, green, prepared, cut into 2 cm long pieces
  • 80 g butter
  • 2 eggs
  • 300 g flour
  • 1 packet of baking powder
  • 200 ml milk
  • 100 g mountain cheese, grated
  • ½ bunch parsley, chopped
  • 2 liters of water
  • 1 tsp sugar
  • 1 tsp salt
  • salt and pepper

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

quick and tasty

Blanch the asparagus in 2 liters of water with 1 teaspoon each of salt and sugar and 10g of butter for about 3 minutes. Mix the remaining butter, eggs, flour mixed with baking powder, milk, and chopped parsley into a batter and season with salt and pepper. Fold in the cheese and all but 12 of the asparagus pieces. Divide the batter among 12 paper baking cups or a muffin tin and garnish each with an asparagus head. Bake the muffins at about 200°C (400°F) for about 25-30 minutes.
