Asparagus salad

Ingredients for 4 servings:

  • 1,000 g asparagus, white
  • 500 g asparagus, green
  • 200 g cooked ham
  • 4 eggs, hard-boiled
  • 2 handfuls of chives, chopped
  • 5 tbsp natural yogurt
  • 2 tbsp rapeseed oil
  • 1 tsp apple cider vinegar
  • salt and pepper
  • nutmeg

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Peel the asparagus, cut into bite-sized pieces, and cook until al dente. The cooking time depends on the diameter of the stalks. Remove the asparagus from the water and let it cool. Let the hard-boiled eggs cool and cut into thin slices. Mix the yogurt, vinegar, oil, and chives together and season with salt, pepper, and nutmeg. Finely chop the cooked ham and stir it into the sauce. Place the asparagus and eggs in a bowl. Pour the sauce over the asparagus and mix gently. The salad also tastes great lukewarm.
