Ingredients for 4 servings:
- 1 kg asparagus
- 4 eggs, boiled
- 1 can mandarin orange(s), drained
- 1 bunch of spring onions
- 1 pinch of salt
- 1 tsp sugar
- 5 tbsp mayonnaise
- 5 tbsp cream
- 1 tbsp mustard
- salt and pepper
- 1 clove(s) garlic
- lemon juice
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes
Cook the asparagus (approx. 10-15 minutes) and let it cool. Add the eggs, mandarin oranges, and spring onions (sliced into rings). Mix with salt and sugar. Mix all the ingredients for the sauce one after the other and pour over the asparagus. Serve with fresh farmhouse bread and tomatoes.
