Asparagus salad with egg

Ingredients for 4 servings:

  • 1 kg asparagus
  • 4 eggs, boiled
  • 1 can mandarin orange(s), drained
  • 1 bunch of spring onions
  • 1 pinch of salt
  • 1 tsp sugar
  • 5 tbsp mayonnaise
  • 5 tbsp cream
  • 1 tbsp mustard
  • salt and pepper
  • 1 clove(s) garlic
  • lemon juice

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Cook the asparagus (approx. 10-15 minutes) and let it cool. Add the eggs, mandarin oranges, and spring onions (sliced ​​into rings). Mix with salt and sugar. Mix all the ingredients for the sauce one after the other and pour over the asparagus. Serve with fresh farmhouse bread and tomatoes.
