Asparagus with a twist

Ingredients for 4 servings:

  • 500 g white asparagus
  • 2 cups of cream
  • salt and pepper
  • 1 tbsp flour
  • 1 tbsp butter
  • 1 tbsp sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Peel the asparagus and cut into pieces approximately 1 to 2 cm thick. Cook in boiling salted water with a tablespoon of sugar for approximately 10 minutes. Drain the asparagus and reserve the cooking water. Sauté the flour and butter until light brown. Deglaze with the cream, stir, and bring to a boil. Stir in the reserved asparagus water, depending on the desired consistency. Season with salt and pepper. Add the cooked asparagus and let it simmer in the sauce for 30 minutes.
