Autumnal apple and horseradish soup

Ingredients for 2 servings:

  • 1 onion(s)
  • Oil for frying
  • 2 apples
  • 200 ml white wine
  • 1 tsp sugar or honey, but then it is no longer vegan
  • 1 jar horseradish, or fresh
  • Salt
  • pepper
  • 100 ml soy cream (Soy Cream Cuisine) (Soy Cream)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Sauté the finely chopped onion in oil, then add the finely chopped apples and simmer on low heat for 5 minutes. Pour in the white wine and continue simmering on the stove for 10 minutes. Season with salt and pepper. Then add the soy cream and sugar (non-vegans use honey) and puree everything. Finally, fold in the horseradish.
