Avocado mousse

Ingredients for 10 servings:

  • 2 avocados (the pulp should be 200g in total)
  • 150 g QimiQ
  • 150 ml cream

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

with QimiQ, prepared in iSi Whip

Halve and hollow out the avocados. Combine the avocado flesh with QimiQ and cream in a tall container using a hand blender. Then pass through a sieve. Pour into a 0.5 l iSi Whip, screw on one cartridge, shake, and then screw on another cartridge, shaking well again. This pairs well with a crayfish or prawn cocktail, for example.
