Ingredients for 1 servings:

  • 125 g bacon, diced
  • 1 egg(s)
  • 80 ml vegetable oil
  • 250 ml buttermilk
  • 250 g flour
  • 3 tsp baking powder
  • 1 tsp sugar
  • ½ tsp salt

Instructions

Combine flour, baking powder, sugar, and salt in a bowl. In a second bowl, beat the egg until frothy, then add the oil and buttermilk while stirring. Gradually stir the flour mixture into the egg mixture, then fold in the bacon. Pour the muffin batter evenly into the prepared muffin cups. Bake in a preheated oven at 200°C for about 20 minutes. The muffins are done when a skewer inserted into the muffin tin comes out clean.
