Ingredients for 5 servings:
- 400 g wheat flour type 405
- 1 ½ tsp baking powder
- ½ tsp dry yeast
- 1 tsp salt
- 200 ml water, lukewarm
- frying oil
- 200 g fish fillet(s) or tofu
- 2 tsp cornstarch
- 150 g flour
- 2 garlic cloves, chopped
- 4 leaves coriander, chopped
- ½ bell pepper(s), chopped
- ½ tsp pepper (Scotch Bonnet, Capsicum cinense chili or 1 tsp very hot chili sauce)
- 1 tsp thyme
- 2 pieces of ginger, thumb-sized, chopped
- 3 tsp salt
- 1 tsp black pepper
- 1 lime(s), juice
- 3 mangoes
- 1 garlic clove(s)
- 1 tsp pepper (Scotch Bonnet, Capsicum cinense chili or 2 tsp very hot chili sauce)
- 1 lime(s), juice
- 1 tsp salt
- ½ tsp black pepper
- ½ onion(s)
- 1 bell pepper(s)
- 1 bunch of coriander
Instructions

For the baked dough, mix the dry ingredients (flour, baking powder, yeast, and salt) in a bowl. Gradually add lukewarm water until the dough has the consistency of bread dough. Knead the dough for three minutes and then let it rest for 30 minutes. Roll the dough out into a sausage shape and cut into 5-6 pieces. Roll each piece out to a diameter of 8-10 cm and deep-fry. Cut the fish fillet or tofu into cubes and mix with the marinade ingredients. In a second deep dish, mix the cornstarch and flour. Toss the fish fillet or tofu cubes in the flour. Heat the oil in a deep fryer and deep-fry the fish fillet or tofu cubes for about 5-6 minutes. Drain on kitchen paper. For the mango chow, wash the mangoes and cut into thin slices. Peel and finely dice the bell pepper, garlic, and onion. Finely slice the Scotch Bonnet pepper. Finely chop the cilantro and mix with the mangoes, bell peppers, onion, and garlic. Season with salt, black pepper, and lime juice. Serve with the freshly fried bread, fish or tofu, and mango chow.
