Baked asparagus with orange juice

Ingredients for 4 servings:

  • 500 g asparagus, white and green
  • 125 g butter, cold
  • 4 egg yolks
  • 100 ml orange juice
  • salt and pepper
  • Sugar
  • 3 tbsp water
  • some mustard

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Peel the white asparagus and trim the ends. Wash the green asparagus and trim the ends. Cook in boiling water with salt and sugar for 15 minutes (white asparagus) and 12 minutes (green asparagus). Then remove and drain well. Whisk the egg yolks, orange juice, salt, pepper, mustard, and 3 tablespoons of water in a small saucepan on the stovetop over very low heat for 8 minutes until fluffy. Whisk in the cold butter in small flakes. When the sauce has thickened, season with salt and pepper. Layer the asparagus in an ovenproof dish, cover with the sauce, and gratinate under the grill for about 4 minutes.
