Baked basil potatoes

Ingredients for 4 servings:

  • 1 garlic clove(s)
  • 2 onions, red or vegetable onions
  • 1 bunch of basil
  • 900 g potatoes
  • 450 g tomatoes, small
  • salt and pepper
  • 2 tbsp olive oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 190°C. Peel and finely chop the garlic. Peel and finely dice the onions. Slice the basil. Wash the potatoes and cut them, still with the skin, into approximately 1 cm thick slices. Wash the tomatoes, slice them, and layer them alternately with the potatoes in a shallow baking dish. Sprinkle salt, pepper, garlic, onions, and basil over everything. Pour over the oil. Cover and bake in the oven for about 60 minutes. A simple, easy-to-prepare recipe that would also taste great with layered zucchini. Ideal as a side dish to meat dishes.
