Baked gnocchi with green asparagus

Ingredients for 2 servings:

  • 500 g gnocchi, from the refrigerated section or dried
  • 500 g asparagus, green
  • 400 g cocktail tomatoes
  • 3 tbsp olive oil
  • 1 cup water
  • 1 garlic clove(s)
  • 1 shallot(s)
  • some lemon juice
  • salt and pepper
  • oregano
  • Thyme
  • basil
  • chili powder
  • Paprika powder
  • 250 g sheep’s cheese

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Peel two-thirds of the asparagus spears and cut them into bite-sized pieces. Make a seasoning sauce with olive oil, lemon juice, water, herbs, and spices. Place the gnocchi, cherry tomatoes, and asparagus in a baking dish and toss well with the seasoning sauce. Finally, crumble the feta cheese over the top and bake at 200°C (400°F) for 30 minutes. It can also be made ahead and refrigerated until ready to bake.
