Baked Maultaschen with pumpkin sauce

Ingredients for 4 servings:

  • 12 Maultasche(n) , with vegetable filling
  • 1 Hokkaido pumpkin(s)
  • 1 onion(s)
  • 2 garlic cloves
  • 1 liter vegetable broth
  • 1 cup of cooking cream
  • 100 g Parmesan, freshly grated
  • salt and pepper
  • chili powder
  • Paprika powder

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Cut the Hokkaido pumpkin into pieces and cook with vegetable stock, onion, and garlic for 10-15 minutes until soft. Purée with a hand blender until a sauce is obtained. Finally, season and add the cream. Bring a pot of water and salt to a boil and let the Maultaschen simmer for 5 minutes. Place the Maultaschen in a casserole dish and pour the pumpkin sauce over them. Sprinkle with cheese and bake at 220°C for 20 minutes. Tip: You can also top the casserole with sheep’s or goat’s cheese.
