Baked parsnips

Ingredients for 4 servings:

  • 800 g parsnip(s)
  • 2 eggs
  • 300 ml milk, low-fat
  • 300 ml vegetable stock
  • 1 bunch of parsley
  • 50 g walnuts
  • 50 g Parmesan

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

to prepare well

Preheat the oven to 160°C (fan assisted oven). Peel and slice the parsnips. Layer them in a large baking dish. Whisk together the eggs, milk, broth, salt, and pepper and pour over the mixture. Bake for a total of 60 minutes. Chop the parsley and walnuts, mix with the Parmesan cheese, and pour over the parsnips after 40 minutes of cooking. Finish baking. Don’t be alarmed by the amount of liquid—it will set. Any meat goes well with this dish—or you can eat the amount for 4 people without any side dish. Just try it.
