Baked potato dumplings with spinach

Ingredients for 2 servings:

  • 500 g potato dumplings
  • 1 large onion(s), finely chopped
  • 2 garlic cloves, finely chopped
  • 300 g creamed spinach
  • e.g. milk or cream
  • herbs, Italian
  • Salt or flavoring
  • pepper
  • Paprika powder
  • 2 balls of mozzarella, sliced

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

Preheat the oven to approximately 210°C. Add the spinach and milk or cream to the pan and heat through. Season with salt or seasoning, if desired. Sauté the onions and garlic in a little oil, add the potato dumplings, and fry. Season with pepper, paprika, and Italian herbs, if desired. Add the warmed spinach and cook briefly. Pour the mixture into an ovenproof dish, top with the mozzarella slices, and bake in the oven until the mozzarella is completely melted (approx. 10-15 minutes). Also delicious with gnocchi.
