Ingredients for 4 servings:
- 4 large potatoes, each approx. 150 g, waxy
- 100 g smoked bacon
- 2 small onions, peeled
- 2 tbsp oil
- 250 g minced meat (beef, alternatively mixed)
- salt and pepper
- 2 tsp thyme, dried
- 1 egg(s)
- 50 g cheese (Emmental or Gouda), grated
- ½ bunch parsley
- 200 g sour cream
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes
Baked potatoes filled with minced meat
Wash the potatoes thoroughly and boil them in boiling water for about 20-30 minutes until almost tender. Halve them lengthwise and very carefully scoop out the flesh with a small spoon. Finely dice the skinned potatoes, bacon, and onions. Preheat the oven to 200°C (top/bottom heat) (gas mark 3, fan oven: 180°C). Heat the oil in a large pan. Brown the bacon and onion cubes until lightly browned. Add the minced meat and brown continuously, stirring continuously. Season the mixture with salt, pepper, and thyme. Finally, add the potatoes and fry briefly. In a large bowl, thoroughly mix the egg with the meat and potato mixture and the grated cheese. Season again to taste. Brush a baking tray with butter. Place the potatoes on top and fill with the minced meat mixture. Place in the hot oven for about 25 minutes and bake. Wash the parsley and chop very finely. Place 1 teaspoon of sour cream on each potato and serve sprinkled with parsley.
