Ingredients for 2 servings:
- 4 sweet potatoes
- 2 handfuls of baby spinach, fresh
- 200 g feta cheese
- 1 tbsp olive oil
- some salt and pepper
- Garlic
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes
without meat
Wash the sweet potatoes and cook them on a prepared baking sheet in a preheated oven at 200°C (400°F) for about 1 hour. Just before serving, saute the washed spinach in a pan with olive oil. Season with garlic, salt, and pepper. Crumble the feta cheese into the pan until it melts slightly. Finally, spread the spinach and feta mixture over the sliced baked potatoes and serve.
