Baked White Aubergine

The perfect baked white aubergine recipe with a picture and simple step-by-step instructions.

  • White eggplant
  • Lime Olive Oil
  • Garlic salt
  • Ground corriander leaves
  • Grated goat cheese
  1. Grate the goat cheese (I prefer the “ Tomme de Chèvre ” here) and let it stand briefly in the refrigerator. Wash the aubergines briefly under hot water and place them in the oven at 200 degrees for about 10 minutes.
  2. Now take the aubergines out again and cut them into 2 cm thick slices. Season the aubergine slices with the herbs listed. Now reduce the oven temperature to 160 degrees.
  3. Now brush a baking dish or on a large ovenproof plate with lime oil and place them there. Put another touch of lime oil on top and then sprinkle the cooled cheese over it.
  4. In the oven, which has now cooled to 160 degrees, bake the aubergine for 10 minutes. That’s it already.
  5. Now add olive oil, a pepper mill and freshly baked baguette to the vegetables. Personally, I rub my baguette with a clove of garlic and put a slice of tomato on top. Then put a few drops of oil on the aubergine slice and you’re done!

TIP

  1. Place the fried aubergine slices in olive oil – perfect to enjoy cold like a kind of tapa.
