Baked White Aubergine
The perfect baked white aubergine recipe with a picture and simple step-by-step instructions.
- White eggplant
- Lime Olive Oil
- Garlic salt
- Ground corriander leaves
- Grated goat cheese
- Grate the goat cheese (I prefer the “ Tomme de Chèvre ” here) and let it stand briefly in the refrigerator. Wash the aubergines briefly under hot water and place them in the oven at 200 degrees for about 10 minutes.
- Now take the aubergines out again and cut them into 2 cm thick slices. Season the aubergine slices with the herbs listed. Now reduce the oven temperature to 160 degrees.
- Now brush a baking dish or on a large ovenproof plate with lime oil and place them there. Put another touch of lime oil on top and then sprinkle the cooled cheese over it.
- In the oven, which has now cooled to 160 degrees, bake the aubergine for 10 minutes. That’s it already.
- Now add olive oil, a pepper mill and freshly baked baguette to the vegetables. Personally, I rub my baguette with a clove of garlic and put a slice of tomato on top. Then put a few drops of oil on the aubergine slice and you’re done!
TIP
- Place the fried aubergine slices in olive oil – perfect to enjoy cold like a kind of tapa.
